Frank's Brown Rice Spiritual Experience



This is a wonderfully simple and incredibly tasty recipe. It starts with great brown rice. The rice from Massa Organics was mentioned in an article in Saveur. They leave it in the fields several weeks longer than most brown rice is harvested. The taste is incredible.

For this recipe:

Cook the 1 cup of rice as you would pasta - rinse the rice first and then bring 8 - 12 cups of water, with salt, to a boil. add rice. Cook for 30 - 35 minutes. Pour rice into strainer and then immediately return to pot, cover and let sit for at least ten minutes. (This recipe is quite good with day old rice.)

other items needed
7 scallions, cut on the diagonal
2 tablespoons sesame oil
2 - 3 tablespoons pine nuts
3 tablespoons light soy sauce

Heat the oil in a non stick pan
Add the scallions and pine nuts. Cook stirring frequently until the scallions are slightly wilted adn the pine nuts have begun to turn a golden color.
Add the rice and stir until the rice is warm and all the ingredients are mixed together,
Add the soy sauce and serve immediately.
