Thursday Night Dinner

I fixed something on Thursday night that was really simple, very tasty and remarkably healthy. It is also quite pretty on the plate. The idea was generated, in part, by a spinach dish that Vienna made last weekend and my interest in using it in a meal. The other thing about this is that it incorporates brown rice which in the old days I found to be awfully boring, but this recipe which I made up really was delicious with the other items. So here goes.

Soy marinated Chicken Breasts - out of "cooking one on one" pg 209 I cut the recipe by two thirds so it worked for just two people.
1/4 cup soy sauce
2 tablespoons mirin wine
1 teaspoon toasted sesame oil
1 tablespoon Asian chili-garlic sauce
2 chicken breasts
mix all ingredients together
preheat the oven to 450
Marinate for 15 minutes to 2 hours
Roast for 15 minutes

Mushrooms and spinach - a takeoff on Vienna's recipe.
Amounts are kind of by eye/taste
2 large handfuls of mushrooms quartered
an amount of spinach that will equal the mushrooms
1 tablespoon or more butter
1 tablespoon or more balsamic vinegar
Salt and pepper to taste
In a frypan saute the mushrooms in butter
When mushrooms are nearly ready add vinegar and spinach. Saute until spinach is well wilted. Add salt and pepper to taste.

Brown rice -
1 cup brown rice
2 cups chicken or vegetarian bullion
2 tablespoons fresh thyme - or other spice you would like
Toss all ingredients into a pot or rice cooker and cook till tender.
(the rice has a flavor and texture that is wonderful - I could eat a lot of it.)
